Baked Feta Pasta

Servings : 6


4 Cups cherry tomatoes

1/3 Cup olive oil

3 Garlic cloves,  minced

Salt & Pepper

1 Block of feta cheese

3 Large cups of fresh spinach 

3 1/2 Cups of penne pasta

1/2 Cup of reserved pasta water

1 Tbsp Dried Basil or Fresh Basil Minced


  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large ovenproof dish place your cherry tomatoes, drizzle with some of the olive oil, minced garlic, salt and pepper to taste.  Stir all these ingredients together in the ovenproof dish so that all the tomatoes are coated.
  3. Make a well in the centre and place your feta cheese there, then drizzle with the remaining olive oil.
  4. Bake in the oven for 30 minutes.
  5. Place a large pot of salted water on high heat on the stove and bring to a boil. Then add your pasta and cook for approximately 10 minutes uncovered, stirring occasionally to prevent sticking.
  6. Remove the reserved pasta water for later use.
  7. When the pasta is ready, drain and keep aside.
  8. Saute the spinach in a pan until wilted.
  9. Remove the dish from the oven and break up the feta cheese, sprinkle over the dried basil and mix these ingredients together in the dish.
  10. Add the pasta and the reserved pasta water and mix together again.
