Banana Bread From Scratch!

Servings : Makes 1 loaf

Equipment needed : Potato masher, loaf pan.

Ingredients

3 Very Ripe Bananas

1/3 Cup butter, melted

1 Cup white sugar (or you can do 1/2 cup white sugar and 1/2 cup brown sugar)

1 Egg, beaten

1 tsp Vanilla extract

1 1/2 Cups all purpose flour

1 tsp Baking soda

Pinch of salt

Method

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare a loaf pan with non-stick baking spray.
  3. Peel the bananas and mash them in a bowl with a potato masher.
  4. Add the melted butter, beaten egg, sugar and vanilla extract to the mashed bananas and mix a little, overmixing will make it chewy.
  5. Add the flour, baking soda and pinch of salt, mix until combined (do not overmix).
  6. Pour the batter into the loaf pan, spreading evenly to the edges.
  7. Bake in the oven for 55 minutes, checking for doneness with a toothpick inserted into the centre, which should come out clean.
  8. Remove from the oven and allow to cool for a few minutes in the pan, then turn the banana bread out onto a cooling rack to cool completely.
