Chewy Brownies

Servings : Makes 18 squares

Equipment needed : Brownie divider pan or a large rectangular baking pan.


1 Cup unsalted butter, softened

2 Cups semi-sweet chocolate

2 Cups dark chocolate

1 1/2 Cups white sugar

1/2 Cup brown sugar

6 Eggs

2 tsp Vanilla extract

1 1/4 Cups all purpose flour

1/4 Cup cocoa powder

1/2 tsp Salt


  1. Preheat the oven 350 degrees Fahrenheit.
  2. If you do not have a brownie divider pan, then use a large rectangular baking pan that you have sprayed with non-stick baking spray.
  3. Put the softened butter and both types of chocolate chips in a glass bowl and melt them either in the microwave or over a pot of boiling water, stirring until well combined and completely melted.
  4. Add the white and brown sugars to the chocolate mixture and mix well together with a whisk.
  5. Add the eggs one at a time to the above mixture, whisking as you are adding each egg.
  6. Then add in the vanilla extract and give a quick stir, then add the flour and cocoa powder, salt and fold the ingredients together with a spoon until everything is well incorporated.
  7. Using a spatula, scrape the brownie batter into the baking pan and spread it evenly to each corner. If you are using a brownie divider pan, remove the divider first, then spread the batter and push the divider back into the batter.
  8. Bake for 30-40 mins, checking at the 30 minute mark to make sure they are not overcooking.
  9. When done, remove the pan from the oven and let it cool. When cool, cut into squares if you don’t have the divider pan, and serve warm with cream or ice cream.
