Chia Seed Pudding

Servings :  2

Equipment needed : Jar with a tight fitting lid & a blender.

Chai Latte Chia Pudding

1/4 Cup water

1 Chai tea bag

1 1/2 Cup Coconut Milk (almond milk or other)

1 Tbsp Honey or maple syrup

1/2 tsp Vanilla extract

1/2 tsp Cinnamon

1/8 tsp Nutmeg

6 Tbsp Chia seeds

Method:

  1. Brew the chai tea bag in the quarter cup of water until well steeped, then pour into the jar.
  2. Add the milk, honey, vanilla, cinnamon and nutmeg, whisk or stir together with a fork.
  3. Add the chia seeds and whisk well together again, let it stand for 10 mins then give it another quick stir.
  4. Put the lid on the jar and place in the fridge overnight.

     

Blueberry Chia Seed Pudding

1 1/2 Cup coconut milk (almond milk or other)

3/4 Cup frozen blueberries

2 Tbsp Honey or maple syrup

1 tsp Cinnamon

1/2 tsp Vanilla extract

6 Tbsp Chia seeds

 

Method:

  1. Using the blender, add the mlk, blueberries, honey, cinnamon and vanilla, put the lid on the blender and blend until well mixed, then pour into your jar.
  2. Add the chia seeds and whisk well together again, let it stand for 10 mins then give it another quick stir.
  3. Put the lid on the jar and place in the fridge overnight.

Mango Chia Pudding

2 Mangoes

1 Cup coconut milk (almond milk or other)

6 Tbsp Chia seeds

 

Method:

  1. Peel and chop both of the mangoes and put one of the chopped mangoes into the blender with the milk then blend well together.
  2. Pour the mixture into your jar and add the other chopped mango as well.
  3. Add the chia seeds and give it a whisk or stir with a fork until well mixed. Let it stand for 10 mins then give it another quick stir.
  4. Put the lid on the jar and place in the fridge overnight.

     

Chocolate Chia Pudding

1 1/2 Cups Coconut milk (almond milk or other)

4 tsp Honey or maple syrup

2 tsp Vanilla extract

2 Tbsp Cocoa powder

6 Tbsp Chia seeds

 

Method:

  1. In the jar pour in the milk, honey, vanilla and cocoa powder, stir together with a fork until well mixed.
  2. Add the chia seeds and give it a good whisk or stir with a fork, and let it stand for 10 minutes, then give it another quick stir.
  3. Put the lid on the jar and place in the fridge overnight.
  4. The next morning, take the chia puddings out the fridge and top them with the toppings of your choice, for example: whipped cream, chocolate, mango pieces, cinnamon, fresh blueberries.
