Chicken Quesadilla

Servings : 2-3

Equipment needed : 2 Baking trays


2 Tbsp olive oil

1 Red onion, sliced

1 Red bell pepper, diced

3 to 4 Cooked chicken breasts, shredded or diced

1 Packet of spinach

1 tsp Paprika powder

2 tsp Chili powder

salt & pepper

1-2 Tbsp of honey garlic bbq sauce

Tortilla wraps

Shredded cheese – three cheese blend  

Toppings – guacamole, sour cream, salsa


  1. Preheat the oven to 350 degrees Fahrenheit. 
  2. Heat a frying pan with the olive oil on heat and place the red onion and red bell pepper in to fry until softened.
  3. Add the spinach to the frying pan and cook until wilted.  Add the shredded chicken and stir to mix together.
  4. Add the seasonings (paprika, chilli powder, salt & pepper), and the bbq sauce. Mix again, then turn off the stove top and remove from the heat.
  5. Using two baking pans lined with parchment paper, place one tortilla in the centre of each pan and sprinkle the cheese on the tortilla, then take the vegetable mix and place it on top of the cheese and spread around, not too close to the edges.
  6. Sprinkle more cheese on top and place another tortilla on top, pressing on top to kind of seal it.
  7. Bake for 10 to 15 minutes until nice and crispy and the cheese has melted.
  8. Remove from the oven and place the cooked tortillas on a cutting board and cut into quarters.
  9. Enjoy with the toppings of your choice.
