Chocolate Cake

Servings : Serves 6 to 8 people when assembled and decorated

Equipment needed : 3 x 8 Inch round cake pans, 3 Wilton Even Baking Strips, large mixing bowl, stand mixer or hand mixer.

Ingredients

Dry Ingredients

2 Cups all purpose flour

3/4 Cup cocoa powder

1 1/2 tsp Baking soda

1 1/2 tsp Baking powder

1 tsp Salt

Wet Ingredients

2 Eggs

1 Cup white sugar

1 Cup brown sugar

2 tsp Vanilla extract

1/2 Cup vegetable oil

1 Cup buttermilk

1 Cup hot brewed coffee 

Method

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare the 3 round cake pans by lining the outside with pre-soaked Wilton Even Baking Strips, and spraying the inside with non-stick baking spray, then line the bottom of the pans with parchment paper, and give one more spray.
  3. In a large mixing bowl, place the flour, cocoa powder, baking soda, baking powder and salt (dry ingredients), gently whisk to combine.
  4. Using a stand mixer or hand mixer with a bowl, add the eggs and beat until mixed.
  5. Add the white and brown sugars and mix again until combined, scraping down the sides as you go along.
  6. Next, add the vanilla extract, vegetable oil and buttermilk then mix to combine.
  7. Gradually add the dry ingredients to the wet ingredients, beating until everything is well combined, scraping down the sides.
  8. Remove the bowl from the stand mixer, if you are using one, then pour the brewed coffee into the mixture and gently mix using a spatula or spoon.
  9. Evenly pour the prepared batter into the cake pans, smoothing it to the edges. 
  10. Bake in the oven for 20 minutes.
  11. Turn the oven off and remove the cake pans then turn the cakes out onto cooling racks to cool completely.
