Chocolate Chip Coconut Blondie Squares

Servings : Makes 18 blondie squares

Equipment needed : Baking Divider Pan or brownie pan, hand mixer


2 Cups all purpose flour

1/2 tsp Salt

1 Cup unsalted butter, melted

2 Cups brown sugar

2 Eggs

3 tsps Vanilla extract

1 1/2 Cups sweet flaked coconut

1 1/2 Cups dark chocolate chips (or any other kind of your choice)

Flaked coconut for the topping


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Prepare the divider pan or a brownie pan with non-stick baking spray.
  3. Put the flour and salt in a bowl and mix together with a whisk, set aside.
  4. In another bowl beat together the melted butter and brown sugar until well blended.
  5. Add in the eggs and vanilla extract to the butter mixture and beat well.
  6. Gradually add the dry ingredients (flour & salt) to the wet ingredients and beat until well combined.
  7. Using a spatula or a spoon, fold in the coconut and chocolate chips until evenly distributed.
  8. Scrape the mixture into the baking divider pan (you will need to remove the divider first) or a brownie pan, spreading evenly to all the corners.  Sprinkle the top with some flaked coconut.
  9. Place the divider back into the pan to separate the squares, if you are using the divider pan.  
  10. Bake in the oven for 30 minutes.
  11. When done, remove from the oven and allow to cool for a few minutes.
  12. If you have a regular pan, cut the blondies into squares, or lift out the divider and the pan to enjoy the baked blondie squares.
