Chocolate Chip Cookie Cake

Servings: Approximately 10


Vanilla Cake

3 Cups All purpose flour

1 Tbsp baking powder

1 tsp Salt

1 Cup unsalted butter, softened

1 1/2 Cups sugar

6 Egg whites

1 Tbsp vanilla extract

1/2 Cup sour cream

1 Cup buttermilk


Chocolate Buttercream

2 Cups unsalted butter, softened

6 Cups icing sugar 

1 Tbsp vanilla extract

Pinch salt

1/2 Cup semi-sweet chocolate chips, melted & cooled.

1/2 Cup dark chocolate chips, melted & cooled.

1/4 Cup heavy whipping cream

1/4 Cup Cocoa Powder


Cream the butter in a stand mixer until smooth. Add Vanilla Extract and salt. Then add heavy whipping cream. Add cocoa powder and melted chocolate chips. Add icing sugar slowly until incorporated. 



Use Chocolate Buttercream

1 Package of chocolate chip cookies


  1. Preheat the oven to 325 degrees F.
  2. Using a small bowl, whisk together the dry ingredients (flour, baking powder & salt).
  3. Place the softened unsalted butter in a large bowl and mix with a hand beater until creamy, then add in the sugar and continue beating for about 2 minutes.
  4. Add the egg whites into (c) and continue beating until fluffy.
  5. Then add the sour cream and vanilla extract and beat until well combined.
  6. Add alternately a little buttermilk and then a little dry ingredients into the wet ingredients until all done in the large bowl, beating the whole time.
  7. Pour the prepared cake batter into two 9 inch round cake pans.
  8. Bake for about 25 minutes until golden, check with a toothpick to see if it is ready, there should be no batter stuck to the toothpick when pricked in the centre.
  9. When ready remove from the oven and turn the cake out onto a cooling rack, and allow to cool.  Once cooled slice each cake in half horizontally.
  10. While the cake is cooling, make the chocolate buttercream icing.
  11. Place one slice of the halved vanilla cake on a clean surface and using a spatula carefully ice this layer with the chocolate buttercream icing, then sprinkle the mini chocolate chips over.
  12. Repeat the above step for the next 2 sliced vanilla cake layers.
  13. Place the last vanilla cake layer on top, cut side down. Now ice the entire cake, top and sides with a spatula until smooth.
  14. Using your hand, grab a small handful of the mini chocolate chips and slowly place them on the sides of the iced cake at the bottom edge.
  15. Fill a piping bag with the icing using a 1m Wilton piping tip and do circular swirls evenly spaced apart on the top of the cake at the outer circumference.
  16. Break a little edge off of a chocolate chip cookie and place the larger piece in the centre of each swirl. Sprinkle cookie crumbs and mini chocolate chips into the centre.
