Cinnamon Apple Muffins

Servings : 9 to 10 muffins

Equipment needed : Muffin pan, hand mixer


2 Cups all purpose flour

1 tsp Baking soda

Pinch of salt

1/4 tsp Ground nutmeg

1/2 tsp Ground cinnamon

1/2 Cup unsalted butter

1/2 Cup white sugar

1/2 Cup Brown sugar

2 Eggs

1/2 tsp Vanilla extract

2 Apples, peeled, cored and diced


  1. Preheat the oven to 375 degrees Fahrenheit
  2. Prepare a muffin pan with muffin liners.
  3. In a bowl add the dry ingredients (flour, baking soda, salt, nutmeg & cinnamon), use a whisk to mix together, then set aside.
  4. In another bowl, put the butter, sugars, and eggs, beat with a hand mixer until well combined.  Add the vanilla extract and mix with a spoon.
  5. Add the diced apples to the wet ingredients and mix together, then gradually add the dry ingredients to the wet ingredients, mixing the whole time with a spoon until blended together.
  6. Spoon the batter into the muffin liners to the top.
  7. Bake in the oven for 25 – 30 minutes until golden brown, checking for doneness but inserting a toothpick into the centre of a muffin, which should come out clean.
  8. Turn the oven off and remove the muffin pan.  Take the muffins out and allow them to cool on a cooling rack.
