Cinnamon Rolls

Servings : Makes 15 rolls

Equipment needed : Bread maker, 9 x 13 inch ovenproof dish, rolling pin.

1 1/2 Cups water

2 Tbsp powdered milk

2 Tbsp vegetable oil

2 Tbsp honey

1 1/2 tsp Salt

4 Cups all purpose flour

1 1/4 tsp Bread machine yeast

Cinnamon filling

1/4 Cup unsalted butter, softened

2 tsp Cinnamon

1/2 Cup brown sugar

1 Cup icing sugar

1 tsp unsalted butter

2 Tbsp Milk

  1. Preheat the oven to 200 degrees Fahrenheit.
  2. Line the ovenproof baking dish with parchment paper that goes up higher than the sides of the dish.
  3. Open the bread machine and remove the centre bread attachment so that you can put the ingredients inside it.
  4. To make the dough, place all of the listed ingredients into the bread machine attachment in the order that is listed above, do not mix any of the ingredients – very important.
  5. Insert the attachment back into the centre of the bread machine and choose the dough setting on your machine.
  6. When the dough is done, remove the attachment and place the dough on a clean, lightly floured surface.  Then using a rolling pin, roll the dough into a large rectangle.
  7. For the cinnamon roll filling use a knife and carefully spread the butter over the dough rectangle, next, using your hands, sprinkle the brown sugar then the cinnamon over the butter.
  8. Roll and tuck the dough from the long side, until you are nearly at the end.  About 2 inches from the end grab the edge and pull it up and over the rolled part of the dough and lightly press it to stick to the dough.  It should look  like a long sausage.
  9. Then using a sharp knife, like a bread knife, evenly slice about 1 inch thick slices, there should be approximately 15 rolls.  Place each slice flat in the prepared baking dish, about 5 rolls long ways and 3 rolls down.  Cover the top of the rolls with another sheet of parchment paper.
  10. Turn the oven off, then place the baking dish in the oven for 30 minutes to allow it to rise. Remove from the oven.
  11. Turn the oven back on to 375 degrees Fahrenheit, when it is hot again, place the baking dish back into the oven to bake for 25 minutes.
  12. While the rolls are baking, make the icing, place the icing sugar in a bowl with the butter and using a spoon make it into a paste, then add the milk and mix together until smooth and spreadable.  If you want more icing, then double this up.
  13. Remove the baking dish from the oven and spread the icing glaze over the top of the rolls while still hot in the baking dish.
  14. To take the rolls out of the baking dish, hold the parchment paper and just slide them up and out.
