Coconut Ice Cream

Servings : 6 to 8

Equipment needed : Stand mixer or hand mixer with a bowl, container for the ice cream.

Ingredients

2 Cups heavy whipping cream

1 Cup condensed milk

1 Cup canned coconut milkĀ 

1 tsp Coconut extract (optional)

1/2 Cup shredded coconut

Method

  1. Using a stand mixer or hand mixer with a bowl, pour in the heavy whipping cream and beat until very thick and stiff peaks form.
  2. Add the condensed milk and continue beating, scraping down the sides with a spatula as you go along.
  3. Pour in the coconut milk and continue beating, then add the coconut extract (optional) and mix again.
  4. Then add the shredded coconut and using a spatula fold it into the above mixture until well combined.
  5. Pour the coconut mixture into a freezer proof container and freeze for about 8 hours.
