Corn Bread

Servings : Makes 8 mini loafs


1 Cup cornmeal

1 Cup all purpose flour

1 tsp Baking powder

1/2 tsp Baking soda

1/8 tsp Salt

1/4 tsp Cinnamon

Pinch of pepper

1/2 Cup unsalted butter, melted

1/3 Cup brown sugar

2 Tbsp Honey

1 Egg

1 Cup buttermilk


  1. Preheat the oven 400 degrees Fahrenheit.
  2. In a bowl mix together all the dry ingredients with a whisk and set aside.
  3. In another large bowl mix together the melted butter, brown sugar and honey, with a whisk, then add the egg and buttermilk and whisk again until combined.
  4. Tip: if you don’t have buttermilk, then add two tablespoons of either lemon juice or white vinegar to 1 cup milk, mix then and wait for it to thicken slightly.
  5. Pour the dry ingredients into the wet ingredients and whisk until combined, do not overmix.
  6. Using mini loaf pans (or 9×9 inch square pan, or muffin tin), fill each loaf ¾ of the way, do not overfill. 
  7. Bake in the oven for 18-20 minutes.
