Healthy Zucchini Noodles

Servings:  2 to 3

Equipment needed : Spiralizer and Blender


2-3 Zucchini

4 Tomatoes, diced

1/2 Cup diced red pepper

1/4 Cup yellow onion, diced

2 Cloves garlic, minced

1/4 Cup dried basil

1/4 Cup dried oregano

1 tsp Sea salt


  1. Cut the hard end of the zucchini and place in the spiralizer, turn the spiralizer until all the zucchini are done. Save the leftover zucchini pieces for the sauce.
  2. Cook the zucchini for a short time in either a frying pan or in the microwave for increments of 30 seconds, you should not overcook the zucchini.
  3. To make the sauce: Using a  blender, place the leftover zucchini pieces, tomatoes, red pepper, onion, garlic, basil, oregano and salt into the blender.
  1. Place the lid on the  blender and mix until smooth, heat the sauce and zucchini noodles in the microwave or on a stovetop.
