Home Made Date Squares

Servings : Makes about 12 squares

Equipment needed : 9 x 9 inch square baking pan


3 Cups of chopped, pitted dates

1 1/2 Cups of water

1 1/2 Cups all purpose flour

1 Cup brown sugar

1 1/2 Cups quick oats

1/2 tsp Baking soda

1 tsp Baking powder

1/4 tsp Salt

1/4 Cup soft, cold unsalted butter

3/4 Cup shortening


  1. Spray a square baking pan with non-stick cooking spray.
  2. Heat a pot on high and add the pitted dates and water to the pot, give it a stir and when it starts to bubble, turn the heat down to low and let it simmer for 20 to 30 minutes, stirring occasionally, until it is soft.
  3. Allow the cooked dates to cool for about an hour either on the countertop or in the fridge.
  4. Preheat the oven to 375 degrees Fahrenheit.
  5. To make the crumble : In a bowl mix together the flour, sugar, oats, baking soda, baking powder and salt with a spoon until well combined.
  6. Measure out room temperature butter into a cup and put it into the fridge for a little to get cold. 
  7.  When the butter has cooled, add it and the shortening into the flour/oat mixture and mix everything together with your hands until it resembles a crumbly mixture.
  8. To make the layers : Pour half of the crumble mixture into the pan and flatten it down with your hands all over the bottom of the baking pan.
  9. Next, scoop the cool date mixture on top of the flattened crumble mixture, spreading evenly all over.  (Leftover date mixture can be frozen in a container).
  10. Sprinkle the last of the crumble mixture over the top of the dates, spreading it around evenly and gently flatten with your hand.
  11. Bake in the oven at 375 degrees Fahrenheit for 20-25 minute until golden brown on the top.
  12. Remove from the oven and allow to cool for a little, then cut into squares and serve.  They can also be frozen if needed.
