Homemade Fluffy Biscuits

Servings : Makes 12 large or 20 small biscuits

Equipment needed : Grater, 2 x baking sheets, circle cookie cutter

4 Cups all purpose flour

2 Tbsp baking powder

2 Tbsp white granulated sugar

2 tsp Salt

3/4 Cup cold unsalted butter

1 1/2 Cups cold milk

  1. Preheat the oven to 425 degrees Fahrenheit.
  2. Line 2 large baking sheets with parchment paper or baking mats.
  3. In a large bowl place the flour, baking powder, sugar and salt and mix together with a whisk.
  4. Use a grater to grate the cold butter into the flour mixture, then using your hands mix the butter into the flour with your fingertips until it resembles bread crumbs.
  5. Pour the cold milk into the flour mixture, then using your hands again, carefully mix the milk into the flour until it forms a dough-like consistency, it should eventually come into a ball. Do not overmix.
  6. When a ball has been formed you divide it into 4 smaller balls then turn the dough balls out onto a clean dry surface that has been lightly floured.
  7. Flatten one of the balls with your hand until about an inch thick, then using the cookie cutter press down to make circles, repeat this until all the dough has been used.
  8. Place all the circular cut shapes onto the lined baking sheet.
  9. Bake in the oven for 10 to 12 mins.
  10. Remove from the oven and place on cooling racks to cool completely.
  11. Enjoy them with soups and stews.
