Homemade Turkey Soup

Servings : 4 – 5

Equipment needed : Large pot, strainer


Homemade Stock – 4 Hours:

Turkey carcass bones

2 Celery stalks, chopped in large chunks

1 Onion, chopped in thick pieces

2 Carrots, chopped in large chunks


2 Sprigs of thyme 

1 Bay leaf





Stock (see above)

1 Onion, diced

1 1/2 Cups of carrots, peeled & diced

1 1/2 Cups of Celery, sliced

2 Cloves of garlic, minced

2 tsp Of poultry seasoning

2 Sprigs of Parsley, finely chopped

1 Bouillon cube

4 Cups of leftover turkey (chopped up)

Pinch of salt & pepper

1 Bag of egg noodles


Stock: Place the turkey carcass bones, carrots, celery, onion, parsley, thyme and bay leaf all into the pot.  Fill with cold water until all the ingredients are just covered.

    1. Put the pot on the stovetop on high heat to bring to the boil, when it starts to boil then add the salt and pepper.
    2. Turn the heat down to low and cover with a lid, let it simmer for 4 hours. When done, strain the liquid out of the pot into another container, then remove all the cooked ingredients, return the strained liquid back into the pot when it’s empty.

Soup: Heat a frying pan with a little oil on medium heat and add the celery, carrots and onion, saute for approximately 10 minutes until softened, stirring regularly.

Add the garlic and continue stirring for 2 more minutes.  Turn off the heat and set aside.

  1. In the pot with the homemade stock on medium high heat, add the sauteed vegetables, poultry seasoning, salt & pepper, turkey pieces and egg noodles, stir to mix.
  2. Cook for about 15 minutes with the lid on, stirring occasionally.
  3. Turn off the stove top, serve and enjoy!
