Italian Pasta Salad

Servings : Approximately 4 to 6



1 Packet of pasta salad powdered mix

1/4 Cup white vinegar

1/2 Cup olive oil


1 1/2 Cups tri-color rotini pasta

1 Cup cherry tomatoes, chopped

1 Cup red bell pepper, chopped

1 Cup cucumber, chopped


  1. Bring a large pot of water to the boil on a stove top, when boiling add the rotini pasta and boil on medium heat for approximately 10 minutes, stirring occasionally to prevent sticking.
  2. When ready, drain the pasta water and place the cooked, cooled pasta into a large bowl.
  3. Dressing: In another bowl pour the pasta salad powdered mix, vinegar and olive oil and whisk until well combined.
  4. To assemble: Add all the chopped vegetables to the tri-color rotini pasta and mix to evenly distribute the vegetables in the pasta, pour over the dressing and mix again until combined.
  5. Place in the refrigerator for up to 2 hours before eating.
