Lentil Soup

Servings : 4 to 6


2 Tbsp olive oil

1 Onion, diced

1 Cup celery, sliced

4 Cloves garlic, minced

1/2 Tbsp ginger, minced

1 tsp Ground cumin

1 tsp Cinnamon

1 tsp Paprika

2 Cups brown lentils, washed

1 1/2 Cups canned diced tomatoes

1 1/2 Cups carrots, chopped

1/2 tsp Cayenne pepper (optional)

6 Cups chicken broth

Salt and Pepper

2 Tbsp fresh parsley, chopped


  1. On the stove top heat the olive oil on medium high heat in a large pot.
  2. Add the onion, celery, garlic, ginger and ground cumin and cook for 2-3 minutes until the onion turns translucent.
  3. Add the ground cinnamon, paprika and brown lentils and stir together.
  4. Add the diced tomatoes, carrots and cayenne pepper and stir again, then add the chicken broth and salt and pepper to taste.
  5. Turn the heat up high to bring the soup to a boil, then when boiling reduce the heat to medium low to simmer for 30 to 35 minutes, covered with a lid.
  6. When ready, sprinkle with fresh parsley.
