New York Cheese Cake

Servings : Approximately 8

Equipment needed: Stand mixer or hand blender and 9” springform cake pan



1 1/4 Cups graham cracker crumbs

1/4 Cup unsalted butter, melted

1 tsp sugar


2 Packages cream cheese, softened (you can use 3 packages for a thicker texture)

1 Cup white sugar

2 Cups sour cream

3 Eggs

1 tsp Vanilla extract


1 Can cherry pie filling


  1. Preheat the oven to 375 degrees Fahrenheit.
  2. Line the base of the round springform pan with parchment paper and lightly grease with a little oil on the bottom and sides of the pan.

  3. In a bowl mix together the graham cracker crumbs, melted butter and sugar with a spoon, then place into the springform pan and spread all around with a spoon or your hand until flattened down.
  4. Place the crust into the oven for about 5 minutes. Then remove from the oven and let it cool completely.

  5. In a large bowl place your cream cheese and beat until creamy and softened, gradually adding the sugar, then the sour cream, and lastly the eggs one at a time and the vanilla extract. Don’t over mix.
  6. Pour the filling over the cooled crust in the springform pan.
  7. Fill another cake pan with some water, and place the springform pan and the additional cake pan with water into the oven.  The cake pan with water will help prevent the surface of the cheesecake from cracking while baking.
  8. Bake for 45 minutes, then turn the oven off and open the oven door and leave the cheesecake to sit in the oven for another hour.  Remove from the oven and check to see if it has cooled completely.

  9. Spoon the filling over the top of the cheesecake and spread evenly.
