Oatmeal Chocolate Chip Muffins

Servings : Makes 12 muffins (double this recipe for more)


1 1/4 Cups milk

1 1/4 Cups of quick oats

1 Egg

1/2 Cup vegetable oil

3/4 Cup of brown sugar

1 Cup dark chocolate chips

1 1/4 Cups all purpose flour

4 tsp Baking powder

Dash of cinnamon and nutmeg


  1. Preheat the oven to 400 degrees Fahrenheit.
  2. In a large bowl, pour the milk over the oats and allow to soak for 15 minutes.
  3. Add the remaining ingredients, mixing a little as you go along.  When all the ingredients have been added, mix well with a spoon to combine.
  4. Using a muffin tray, line each with a paper muffin cup liner.
  5. Using a spoon, scoop the batter into each cup up to the top of the muffin liner.
  6. Place in the oven for 15 to 20 mins until risen and golden.
