Pulled Chicken With Capellini Pasta

Servings : 4 to 6


1 to 2 handfuls of Capellini pasta

1 Cooked breast, pulled into shreds

2 Cans pasta tomato sauce

1 tsp dried or fresh basil

Pinch of salt

1/2 Red bell pepper, diced

7 Cherry tomatoes, diced

2-3 Cups of fresh spinach

1 Cup of shredded mozzarella cheese, or cheddar cheese

Additional extras: hot sauce or chillies.

Parmesan cheese for sprinkling


  1. On a stovetop bring a pot of water to the boil and add the capellini pasta, pushing it down into the water with a wooden spoon or pasta scoop as it softens.  Gently boil for 7 to 10 minutes without a lid, stirring occasionally, until ready.  Drain and set aside.
  2. Using another pot, pour in the pasta tomato sauce and add the basil and salt and heat to medium high until starting to simmer, stir to mix.
  3. Add in the diced red pepper and simmer with the lid on until it softens. Reduce the heat to low and add in the spinach and cherry tomatoes, mixing together.
  4. Add in the pulled chicken and turn the heat back up to medium. With the lid slightly askew allow to simmer until the spinach has wilted and the tomatoes softened.
  5. Add the capellini to the tomato sauce mixture and mix with a wooden spoon until the pasta is coated with the sauce.
  6. Add the mozzarella cheese and mix again, let it simmer on low for about 5 minutes with the lid slightly askew.
  7. Remove from the heat and serve with parmesan cheese sprinkled on top.
