Pumpkin Scones


2 Cups all purpose flour

7 Tbsp white sugar

1 Tbsp baking powder

Pinch of salt

1/2 tsp Ground cinnamon

1/2 tsp Ground nutmeg

1/4 Ground cloves

6 Tbsp cold unsalted butter

1/2 Cup canned pumpkin puree

3 Tbsp half and half (light) cream

1 Egg

Glaze: Regular : 

1 Cup icing sugar & 1 Tbsp milk

 Spiced   :  1 Cup icing sugar, 2 Tbsp milk, ¼ tsp ground cinnamon, pinch of

 ground nutmeg & a pinch of ground cloves


  1. Preheat the oven at 425 degrees Fahrenheit.
  2. Line the baking sheets with parchment paper, and sprinkle a little flour over to prevent sticking of the dough.
  3. In a large bowl place all the dry ingredients (flour, sugar, baking powder, salt, cinnamon, nutmeg & cloves) and mix together using a whisk or a spoon.
  4. Add the cold butter to the dry ingredients by grating it over the flour mixture, then using your fingertips, slowly mix it into the flour until it resembles breadcrumbs.
  5. Next, using another bowl, add the wet ingredients (pumpkin puree, light cream and egg), then mix together with a whisk until smooth.
  6. Then, using a spoon or spatula, scrape the wet ingredients into the dry ingredients, using your hands to mix it up and bring it all together like a dough.
  7. Using a tennis ball sized piece of dough, flatten it onto the baking sheet surface until about half an inch thick, then using a pizza cutter, cut through the dough to make 4 small triangles, take a triangle and shape it to the size you want and place it on the baking sheet.  Do this with all the remaining dough.
  8. Bake in the oven for 10-14 minutes, when ready turn off the oven and remove the baking sheets from the oven, allow the scones to cool on the baking sheet before glazing.
  9. Glaze: In a small bowl, add the icing sugar and milk, then mix with a spoon until thick and smooth, for a plain glaze.  Next, for the spiced glaze, in another bowl, add the icing sugar, milk and spices and mix with a spoon until smooth and a little runny.
  10. Then using a metal spatula or knife, spread some plain glaze over the surface of each cooled scone.
  11. Using a spoon scoop some spiced glaze and drizzle it in squiggles over the plain glazed scones.
  12. Let the glaze harden a little before serving.
