Quick Instant-Pot Scalloped Potatoes

Servings : Approximately 4

Equipment Needed : Instant Pot


2 Pounds potatoes (3 large or 7 small) 

1 Cup water

1 Cup heavy whipping cream

2 Cups Mozzarella cheese, shredded.

1/2 tsp Salt

1/2 tsp Garlic powder

1/2 tsp Dried thyme

1/4 tsp Black pepper

1 Cup chopped ham (Optional)

2 Cups mozzarella cheese (for garnishing)


  1. Turn the oven on to broil / grill.
  2. Wash and peel the potatoes then cut them into ¼ inch thick slices.
  3. Open the Instant Pot and add the water, then the sliced potatoes, close the lid and seal to pressurise.
  4. Select the Pressure button for 1 minute, when the minute is up, open the vent to allow the steam to escape and when the bar drops it will be ready to open. Do not open too soon as the steam is very hot.
  5. Open the Instant Pot and remove the potatoes from the Instant Pot and place in a glass bowl.
  6. To make the sauce: Reset the Instant Pot by pressing Cancel.  Then select saute on high.
  7. Pour the heavy cream, cheddar cheese, salt, garlic powder, dried thyme, black pepper and chopped ham, then stir together in the Instant Pot for 3-5 minutes until it becomes creamy.  Press Cancel on the Instant Pot.
  8. Pour the creamy sauce over the potatoes in the glass bowl and gently mix together.
  9. Transfer this into a baking dish and sprinkle with the mozzarella cheese.
  10. Place in the oven for 4-6 minutes until the cheese is melted and golden.
