Quinoa Salad

Servings : 4 to 6

Equipment needed : Large bowl


1 Cup quinoa, rinsed

2 Cups water

1 Can chickpeas, drained and rinsed

1 Cup cucumber, diced

1 Red bell pepper, diced

3/4 Cup red onion, finely chopped

1 Cup fresh parsley, finely chopped


1/4 Cup olive oil

1/4 Cup lemon juice

1 Tbsp red wine vinegar

2 Cloves of garlic, minced

Pinch of salt & pepper to taste


    1. Quinoa: On a stovetop, bring a medium sized pot to a boil with the water, when boiling add the rinsed quinoa, turn down the heat to low, give it a little stir and simmer slowly with the lid on for about 15 minutes  or until all the water has evaporated.
    2. Turn off the stovetop and set the quinoa aside for a few minutes,  Fluff up with a fork to prevent sticking.  Allow the quinoa to cool completely.

      Dressing: In a bowl mix together the olive oil, lemon juice, red wine vinegar, minced garlic and salt & pepper, stir with a spoon and set aside.

      To make the salad: In a large bowl combine the cooked, cooled quinoa, chickpeas, cucumber, red bell pepper, red onion and parsley.

  1. Mix the vegetables and quinoa together with a spoon, then pour over the dressing and mix again until well combined.
  2. Refrigerate until cool.
