Salmon With Garlic Butter Sauce

Servings: 4

Equipment needed : 2 Baking sheets


4 Salmon fillets

1 Bunch of asparagus, trimmed

1/2 Bag of mini potatoes, skin on & washed

Bunch of carrots, washed & peeled

1/2 Lemon

1 Tbsp salmon seasoning

5-6 Cloves of garlic, minced

Dried parsley

Dried rosemary

1/2 Cup melted unsalted butter


  1. Preheat the oven to 400 degrees Fahrenheit.
  2. Chop the potatoes into quarters, cut the stalks off the carrots and place these vegetables on a baking sheet lined with parchment paper.
  3. Drizzle 2 tablespoons of olive oil over the carrots and potatoes, then add 1 teaspoon of the minced garlic to the carrots.
  4. Sprinkle the dried parsley over the carrots and the dried rosemary over the potatoes, then using your hands mix the potatoes, then mix the carrots, so that all the herbs and seasonings are well distributed.
  5. Place the baking sheet in the oven for 15 minutes.
  6. While the carrots and potatoes are cooking, line another baking sheet with parchment paper and place the salmon fillets and trimmed asparagus on it.
  7. Squeeze half a lemon into the melted butter and stir with a spoon, then drizzle this over the salmon and asparagus as desired.
  8. Use the remainder of the minced garlic and spoon this over the salmon and asparagus.  Spread the garlic with a spoon evenly over the salmon.
  9. Sprinkle the salmon seasoning over the salmon fillets, then using your hands mix together the seasonings on and around the asparagus spears.
  10. After the 15 minutes cooking time has passed for the potatoes and carrots, add the asparagus and salmon baking sheet to the oven as well and cook for an additional 10 minutes.
  11. Remove from the oven and enjoy!
