Sausage Tortellini

Servings : 4 to 6

Equipment needed : 2 medium sized or 1 large ovenproof baking dish


2 Tbsp olive oil

500g to 1kg of ground sausage meat

1 1/2 Cans of tomato pasta sauce

Pinch of salt & pepper

1- 2 Cups mozzarella cheese

1/2 – 1 Cup of parmesan cheese

2 Packages of cheese tortellini 

1/2 Cup water

Dried Italian seasoning or fresh herbs like basil, oregano & parsley


  1. Heat a pan on the stovetop on high and add the olive oil.  When the oil is hot, add the ground sausage and mix it around breaking up any lumps as it cooks.  Cook it until it is no longer pink.
  2. Add the 1 ½ cans of tomato pasta sauce to the ground sausage and mix together with a spoon, keeping the heat at medium high.  Add a pinch of salt & pepper and stir.
  3. Add the herbs/seasonings and the water and stir.
  4. Open the packages of tortellini and add them to the sausage and tomato mixture and stir to coat all the tortellini with the sauce. Bring to a boil with the lid on the pan, then reduce the heat to a medium low to simmer.
  5. When the tortellini is soft and ready, remove the pan from the heat and pour the cooked mixture into the ovenproof baking dish/dishes.  Sprinkle it with mozzarella and parmesan cheeses.
  6. Bake in the oven at 350 degrees Fahrenheit for 2-5 minutes until the cheese melts, then turn the broiler (top element only) on and broil until the cheese is golden and crispy, about 2 minutes, watching it to make sure it doesn’t burn.
  7. When ready, turn the oven off and remove the dishes from the oven.  Serve with caesar salad and garlic bread.
