South African Milk Tart

Servings : 4 to 6 people

Equipment needed : 8 Inch round pie dish, hand mixer

Ingredients

Pastry

1 Cup all purpose flour

1 tsp Baking powder

1/4 Cup unsalted butter

2 Tbsp white sugar

1/2 Beaten egg (other 1/2 for filling)

Filling

1 1/2 Eggs, beaten (use other 1/2 egg from pastry)

1 1/2 Tbsp all purpose flour, heaped

1 1/2 Tbsp cornstarch, heaped

1/4 Cup white sugar

2 1/4 Cups milk

1 tsp Vanilla extract

1 tsp Unsalted butter

Cinnamon for sprinkling

Method

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Pastry: In a bowl, whisk together the flour and baking powder, set aside.
  3. In another bowl, beat the butter and sugar with a hand mixer until creamy, then add the ½ beaten egg and beat again.
  4. Add the dry ingredients to the wet ingredients, then using your hands mix them together until you get a crumbly mixture.
  5. Press the pastry onto the bottom and sides of an 8 inch round pie dish, until well compacted.
  6. Bake in the oven for 15 to 20 minutes until golden.  When ready, turn the oven off and remove the pie dish, let it cool while you make the filling.
  7. Filling: In a bowl mix together the 1 ½ beaten eggs, heaped tablespoons of flour & cornstarch and sugar, mix together with a spoon.
  8. Using a pot on the stovetop at medium high heat, add the milk and when the milk is warm, add the egg mixture to the milk in the pot using a spatula, then, whisk to combine.
  9. Continue whisking to prevent sticking and lumps while the mixture thickens and becomes custard-like.  When the mixture is nice and thick, turn off the stovetop and remove the pot from the heat.
  10. Add the butter and vanilla extract, then using a hand mixer, beat together until butter is melted and everything is smooth with no lumps.
  11. Pour the custard-like mixture into the prepared pie shell, smoothing it with a spatula to all the edges.
  12. Sprinkle with cinnamon, allow to cool slightly before covering with plastic wrap.
  13. Refrigerate for about 6 hours until cold and set.
