Starbucks Oat Bars

Servings: 16 to 18 bars

Equipment needed: Food processor


7 Cups quick oats

1 Cup unsalted butter, softened

1 Cup brown sugar

1/2 Cup corn syrup

1/2 Cup milk

2 tsp vanilla extract


Preheat the oven to 325 degrees fahrenheit.

  1. In a food processor, pulse 2 cups of the quick oats into a powder
  2. In a large bowl mix the powdered oats with the other 5 cups of quick oats.
  3. On the stove top melt the unsalted butter over medium heat, then add the brown sugar and corn syrup, using a whisk to combine the ingredients.
  4. When all the brown sugar has dissolved and there is a nice caramel colour, remove from the heat.
  5. Then add the milk and vanilla to the butter/sugar mixture and whisk together for a minute until it thickens up a bit.
  6. Combine the liquid mixture with the oats and stir until well mixed.
  7. Scoop the mixture into a large rectangular pan and spread evenly and press down gently.
  8. Place in the oven for 15 minutes.
  9. Allow to cool and cut into even squares.
