Strawberry Pie

Servings : Serves 4 to 6 people

Equipment needed : Pie dish 9”

1 1/4 Cups Graham Cracker crumbs

1/4 Cup white sugar

1/4 Cup melted, unsalted butter

1 Cup white sugar

1 Tbsp cornstarch

1 Cup water

1 Package 85g strawberry Jello

2 Cups fresh sliced strawberries

1 -2 Cups whipped cream

  1. Crust: Preheat the oven to 375 degrees Fahrenheit.
  2. In a bowl add the Graham Cracker crumbs and white sugar, give a little stir to mix together, then add the melted butter and mix together until all combined.
  3. Pour the crumb mixture into the pie plate, then using your hands, press down firmly to compact the crumb mixture onto the bottom and sides of the pie plate.
  4. Place in the oven for approximately 8 minutes, until slightly golden and toasted.  Remove from the oven and let it cool completely.
  5. Filling: On the stovetop using a medium sized pot, add the sugar and cornstarch, then stir together until mixed.
  6. Add the water and stir together with the sugar and cornstarch.
  7. Then turn the stovetop onto high to bring the mixture to a boil until it turns clear.
  8. Lower the heat and add the package of Jello, stirring to mix together, then turn the heat back high and bring to a boil again.
  9. When the Jello mixture has thickened, turn off the heat and remove the pot.  Allow to cool.
  10. In a large bowl add the sliced strawberries and Jello mixture, scraping with a spatula or spoon. Mix together until everything is combined.
  11. Pour the filling into the cooled, baked pie crust, spreading evenly to the sides.
  12. Topping: Dollop the whipped cream on top of the strawberries in the pie plate, spreading to the edges. Decorate with extra slices of strawberry.
