Strawberry Shortcake

Servings: Approximately 8-10

Equipment needed: Stand mixer or hand beater, piping bag.


2 Cups approx. Cool Whip (or beat your own heavy whipping cream with a little castor sugar until thick).

2 Quarts or 8 cups of fresh strawberries, some hulled & sliced in half, some thinly sliced and some whole with hulls.


Vanilla Cake Recipe:

2 Cups flour

2 1/2 tsp Baking powder

1/8 tsp Salt

4 Eggs

1 1/2 Cups sugar

1/2 Cup butter

1 Cup milk 

3 Tsp Vanilla extract

3 Tsp Vegetable oil


Preheat Oven to 350 degrees F.

Grease and line 3 x 8 inch round baking pans with parchment paper.

  1. Mix flour, baking powder and salt in a bowl.
  2. Beat eggs then add the sugar, beating for 7 minutes until light and fluffy (use a stand mixer or hand beater)
  3. Heat the milk and butter in a bowl in the microwave until the butter has melted.
  4. Add flour mixture to egg mixture and blend, then add the egg mixture.
  5. Add the vanilla and oil and Mix until just blended (do not over mix)
  6. Pour into the 3 cake pans.
  7. Bake for 20 minutes until golden (check if it is ready by inserting a toothpick into the centre, if it comes out clean then it is ready.)


Vanilla Mousse Pudding Filling

1 Package Cream Cheese 

1/2 Cup icing sugar

2 Cups heavy whipping cream 

1 Package instant vanilla pudding


  1. Beat cream cheese until smooth.
  2. Gradually add icing sugar on low speed.
  3. Add the heavy whipping cream and beat on high speed until blended.
  4. Add the instant vanilla pudding and beat until thick.



  1. Place one of the baked vanilla cake rounds, that has completely cooled, on a clean work surface.
  2. Use either a piping bag or a spatula and gradually line the outer edge of the cake round with the pudding filling to create a barrier.
  3. Then use more filling to fill in the centre of the barrier and smooth it out using a spatula or knife.
  4. Next, make a border by arranging your halved strawberries cut side down, with the hulled side facing outwards.
  5. Fill the inside of the border with the thinly sliced strawberries arranged however you choose to make a layer.
  6. Place the next vanilla cake layer on top and repeat steps b, c, d and e.
  7. Place the last vanilla cake layer on top.
  8. Pipe or spread with a spatula the Cool Whip or fresh thick whipped cream on the top of the cake and decorate using your piping bag making small circular swirls.
  9. Arrange about 5 of the whole strawberries with their hulls intact on top on the outer edges.
  10. Finally,  place some halved strawberries in the centre.
