Sweet Chili Chicken And Jasmine Rice


2 Tbsp olive oil

4 Chicken breasts, diced

Salt & pepper for seasoning

Sweet Chilli Thai sauce – 1 to 2 small bottles

1 Can coconut milk

1 1/4 Cups of water

1 tsp Sugar

pinch of salt

1 1/2 Cups jasmine rice

2 Cups Asian blend vegetables


  • To make the jasmine rice: In a pot on the stovetop, bring the water, coconut milk,  sugar and salt to a boil on high heat, then add the jasmine rice and give it a little stir.
  1. Cover the rice and turn the heat down to low and allow it to cook for 15 minutes.  Remove from the heat when ready.
  2. Season the diced chicken breasts with salt and pepper.
  3. Put the olive oil in a skillet over medium to high heat and place the seasoned chicken breasts in to brown, making sure there is no pink left.  Stir to prevent sticking.
  4. Reduce the heat to medium and add the sweet chilli Thai sauce to the chicken, mixing to glaze all the chicken pieces, cook until the chicken is cooked all the way through.
  5. Add the asian blend vegetables to the rice and mix together, then serve.
