TUXEDO CAKE

Ingredients

Servings : 8 to 10

Equipment needed : 3 x 8 Inch round cake pans, stand mixer or hand blender with a bowl, acetate paper, bent metal spoon for spreading filling.

 

Cake Ingredients:

2 Cups all purpose flour

¾ Cup cocoa powder

1 ½ tsp Baking soda

1 ½ tsp Baking powder

1 tsp Salt

1 Cup white sugar

1 Cup brown sugar

2 Eggs

½ Cup vegetable oil

1 Cup buttermilk

2 tsp Vanilla extract

1 Cup hot brewed coffee

Method

To make the cake:

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Grease the 3 x 8 inch round cake pans with non-stick baking spray.
  3. In a bowl whisk together the flour, cocoa powder, baking soda, baking powder, and salt until combined.  Set aside.
  4. In a stand mixer (or hand mixer with a bowl), beat together the white sugar, brown sugar and eggs for approximately 5 minutes until smooth and creamy.
  5. Add the vegetable oil, buttermilk, vanilla extract and hot brewed coffee, and continue mixing.
  6. Next, using a spoon or a spatula, gradually add the dry Ingredients to the wet ingredients, carefully combining until no lumps are present.
  7. Evenly pour the cake batter into the 3 pans.
  8. Bake in the oven for 20 minutes, until a toothpick inserted into the centre comes out clean.
  9. Turn off the oven when ready and remove the cakes.  Allow the cakes to cool for a few minutes before turning them out onto cooling racks to cool completely before icing.

Chocolate Mousse Pudding Filling

1 Package cream cheese, softened

1/2 Cup icing sugar

1/4 Cup chocolate chips, melted

2 Cups heavy whipping cream

1 Package chocolate instant pudding

 

White Chocolate Mousse Pudding Filling

1 Package cream cheese, softened

1/2 Cup icing sugar

1 Cup white chocolate chips, melted

2 Cups heavy whipping cream

1 Package vanilla instant pudding 

 

Chocolate Fudge Icing

Melted chocolate chips

1/4 Cup unsalted butter, softened

2/3 Cup of milk

1 Cup icing sugar

1/4 tsp Vanilla extract

Mix all the ingredients with a mixer until smooth and creamy.

 

To Assemble The Cake:

  1. Place the first cake layer on a clean dry surface or a cake board and wrap around the acetate paper to form a cylinder (use tape to hold it closed).
  2. Using the bent metal spoon, scoop the chocolate mousse pudding filling on top of the cake layer and evenly spread to the sides of the acetate paper.
  3. Carefully place the next cake layer on top of the chocolate mousse pudding filling inside the acetate paper cylinder.
  4. Scoop the white chocolate mousse pudding filling onto the second cake layer, spreading evenly to the sides.
  5. Next, put the third cake layer on top of the white chocolate mousse pudding filling.
  6. Spread the chocolate fudge icing onto the final cake layer.  Place the cake into the fridge for 10 to 15 minutes for the icing to set before removing the acetate paper.
  7. Take the cake from the fridge and carefully remove the tape and acetate paper from around the cake.
  8. Using an icing spatula, smooth the sides of the cake if needed.
  9. Dust the top of the icing with cocoa powder.
  10. Decorate the tuxedo cake with white chocolate and chocolate shavings and any other additional decorations of your choice.
