Whipped Shortbread Cookies

Servings : Makes 15 to 20 cookies

Equipment needed : Stand mixer or hand mixer, 2 rectangular baking sheets


1 Cup unsalted butter, softened

1 1/2 Cups all purpose flour

1/2 Cup icing sugar

1/2 Cup maraschino cherries, chop each cherry in half (red and green)


  1. Preheat the oven to 350 degrees Fahrenheit.
  2. Line the baking sheets with parchment paper.
  3. Using a stand mixer or hand mixer with a bowl, put the butter, flour and sugar in and beat, using a spatula to scrape down the sides as you go along.
  4. Beat for 10 minutes until the texture is smooth and very whipped.
  5. Using a tablespoon, scoop a bit and put it on the baking sheet, flattening it a little to make a small flat round shape, then put a cherry half in the centre.
  6. Bake in the oven for 15 minutes until very lightly browned.
  7. Remove from the oven and allow to cool completely on a cooling rack.
