Zucchini Bread

Servings : Makes 2 loaves

Equipment needed : 2 Loaf tins, hand mixer or stand mixer, grater, peeler.


1 1/2 Cups of sugar (brown or white)

1 Cup vegetable oil

3 Eggs

2 Cups zucchini, peeled & finely grated

2 tsp Vanilla extract

2 Cups all purpose flour

2 tsp Baking soda

1 tsp Salt

1/4 tsp Baking powder

3 tsps Cinnamon

1 Cup raisins (optional)

1 Cup walnuts (optional)


  1. Preheat the oven 350 degrees Fahrenheit.
  2. Prepare two loaf tins with non-stick baking spray.
  3. In a large bowl, beat together the sugar, vegetable oil and eggs with a hand mixer or you can use a stand mixer, until well mixed, then add the grated zucchini and beat again.
  4. Add the vanilla extract, all purpose flour, baking soda, salt, baking powder and cinnamon.  If you are wanting to add raisins or nuts, please do so now.
  5. Beat together until well combined, then evenly distribute the batter into the 2 loaf tins.
  6. Bake in the oven for 35 to 40 minutes until a toothpick inserted into the centre comes out clean and dry.
  7. Remove from the oven and turn them out onto a cooling rack and allow to cool completely.
